Summer is Here!

Well, almost anyway. We had some 80+ degree days and then back to 60's which is just fine with me and now headed to the upper 90s this weekend. Christian is already done with his first year of college and did fantastic with his grades. He's got his schedule set for fall and is on track to graduate in three semesters. Cade finished classes yesterday and he's out for the summer as well. Can I tell you how excited he is about that? Just as excited as Bre used to get. Those two are so alike when it comes to school and Christian, the polar opposite, waiting for fall semester to begin already.
Cade and I are headed on a road trip the first part of June in between treatments. My last one is June 17th and then Wilma's official eviction in July. I'll be meeting with the surgeon in a couple weeks to schedule and I'm ready for that appointment! I'm ready to get this show on the road. It feels like we've just been chugging along so far.
When we went to Asheville last October, we came across a place called Biscuit Head that had fantastic biscuits and gravy. Many of you know that we hunt down places known for their biscuits and gravy when we travel and the best ever was a hole in the wall 50s style dinner just outside of San Francisco called Teresa and Johnny's. We were headed somewhere in Asheville when we saw the huge line in the parking lot and decided to go down the road to the next place. It turned out to be the second best we've found. When we got home, we looked for a copycat recipe as we had for Teresa and Johnny's (who didn't have one floating around). Fortunately, we didn't just find a copycat recipe, but the book they published with their recipe for the cathead biscuits as well as the sausage gravy. This morning, we got up early and made five batches for the breakfast at the farm and everyone loved it!
We used to have a standing dinner with some friends every six weeks that we had to skip during COVID and we've finally started dinners with them back again. Tomorrow we get to hang out with friends we haven't seen for a bit and then a relaxing Monday before Rhys and Christian start their work week again. Summer is looking good so far! ☀️
TODAY'S SILVER LINING: Rhys was so excited to share our recipe with everyone today so it was totally worth it to lose some sleep. Seeing him happy makes me happy. 🙂
